Watermelon Feta Salad

This salad is healthy and refreshing.  It has an interesting twist on the typical fruit salad.  It can be considered patriotic with the pink, white, and blue ingredients – bring it along for your  4th of July potluck!  The feta adds creaminess and a bit of tart; the fresh basil adds another dimension – also while enhancing the watermelon flavor. It’s fresh.  And so simple.


Watermelon Feta Salad

Ingredients
  • ½ watermelon - sliced and chopped
  • ½ c. fresh blueberries
  • 2 T. feta cheese
  • 1-2 t. fresh basil chopped
Instructions
  1. Combine watermelon and blueberries in a large bowl. Then add feta cheese and basil. Carefully stir together. Keep refrigerated until ready.

Something else that is fun to do with the watermelon, is to cut out shapes using a cookie-cutter.  I’ve used the star cookie cutter before on our American holiday.  All you need to do is to cut the watermelon in thin slices – approximately 1/2 inch thick, then use a cookie cutter of choice to make festive shapes.
