A dozen eggs have been a great price lately at our local Aldi. Hurray! (Side note: does anyone out there love Aldi as much as I do? I think it is such a blessing!)
So, I’ve been feeding my hungry tribe of five kids deviled eggs, breakfast burritos, egg casserole, and lots of different varieties of quiche.
This white cheddar and bacon quiche has been a recent favorite.
Bacon is always a winner at our house. And the sharpness and creaminess of the white cheddar really sends this quiche over the top.
I think a quiche is such a complete, perfect dish. The crust adds just a little crunch, and the the fluffy, cheesy egg filling is so scrumptious. We often eat quiches for breakfast, paired with a fresh fruit salad or a smoothie. And we also eat them for dinner, paired with a great salad, like this refreshing strawberry spinach salad.
Give this white cheddar and bacon quiche a try for breakfast, brunch, or dinner. I think you’ll find it scrumptiously satisfying.
- 4 slices bacon, cooked and roughly chopped
- 8 eggs
- 1 C milk (I use skim)
- ¼ C minced green onion
- 1 t salt
- 1 t pepper
- 8 oz sharp cheddar cheese, grated
- 1 unbaked 9 inch pie crust (I use store-bought)
- Preheat oven to 350 degrees.
- In a large bowl, whisk together the eggs, milk, onions, salt, and pepper.
- Stir in the bacon and cheddar.
- Pour the mixture into the pie crust. Place the pie on a rimmed baking sheet to prevent the filling from spilling over into your oven. (Its so much easier to clean a baking sheet than the bottom of your oven!)
- Bake until the quiche is golden and set in the center, about 45 minutes.
- Remove from the oven and let stand for 10 minutes before serving.
