I often think of this salad as a seasonal winter salad, but of course it doesn’t have to be. Lately I have been craving salads with fruit. My mom has always done a fantastic job of throwing in fruits like blueberries, strawberries and clementines to add some extra “pop” to salads.
If I have a few simple ingredients on hand, I can make an easy salad in just about 5 minutes. How wonderful is that? Here’s a few I like to toss in:
Lettuce that has a variety of leaves and colors – such as a Spring Mix
Red onion or green onion – a little bit goes a long way, but contributes to bring out wonderful flavors
Nuts – I happened to pick up a hug package of pecan halves at Costco, so I’m using lots of pecans right now. However, many seeds and other walnuts or almonds are easy additions for more protein.
Cheese – Almost always I will throw in either feta cheese or goat cheese for a bit of creaminess.
Fruit – Fruit it fun to mix in. Citrus is especially good this time of year. One can add about as much they please to this category and it will be bursting with flavor.
Winter Salad with Poppy Seed Dressing
Ingredients
- 12 oz of lettuce mix I use a Spring Mix
- 1/8 of a red onion sliced
- 1/3 c. pecan halves
- 1/8 c. feta or goat cheese
- 1 clementine - peeled and separated
- 1/4 c. fresh blueberries or strawberries
- poppy seed dressing as desired I use Brianna's
Instructions
- Place washed and dried lettuce in a large bowl. Add onion, pecans, feta, and fruit. Drizzle with favorite salad dressing.
- Toss and serve.
