Corn & Cucumber Salad

Ingredients

  • 3 c. cooked cut corn (about 5 medium sized cobs)
  • 2 c. cucumber peeled, seeded, and chopped
  • 1/4 c. basil chopped
  • 1/4 c. chives chopped
  • 2 T. mayonnaise
  • salt and pepper to taste

Instructions

  • In a medium mixing bowl, toss together the corn, cucumber, basil, and chives. Stir in the mayonnaise. Add salt and pepper to taste.
  • Serve within a few minutes or store and refrigerate until ready to serve.
