Keto (Low-Carb) Chocolate Ice Cream

Ingredients

  • 12 oz unsweetened almond milk
  • 2 teaspoons erythritol I used the Trim Healthy Mama Gentle Sweet, liquid stevia,Steviva or Splenda
  • 1 t vanilla extract
  • 1 pinch salt
  • 1/2 t glucommanan
  • 1 t heavy cream
  • 3 T cocoa powder

Instructions

  • Put the almond milk, sweetener, vanilla, and salt in a blender. Start blending, then add the glucommanan, and blend for twenty seconds,
  • Pour mixture into an electric ice cream maker and follow the manufacturers directions. Mine takes thirty minutes to turn into ice cream.
  • **This recipe is best right out of the ice cream maker. However, if you've got some left over, it freezes very hard! We scoop some out and give it a quick whiz in the blender with 1-2 tablespoons of almond milk or cream to get the creamy consistency again.
