Mississippi Mud Bars

Decadent and delicious, this dessert delights the taste buds and the eyes. Easy to make and makes a bunch!

Ingredients

  • Bar:
  • 2 C sugar
  • 2 sticks butter or margarine
  • 3 T cocoa
  • 4 eggs
  • 1 t vanilla
  • 1 1/2 C flour
  • 1 1/3 C coconut
  • 1 1/2 C nutmeats
  • Frosting:
  • 1 lb. powdered sugar
  • 1 stick margarine or butter
  • 1/2 C evaporated milk
  • 1/3 C cocoa
  • 1-2 C small marshmallows
  • 1 t vanilla

Instructions

  • Cream together the sugar, butter and cocoa; add well-beaten eggs, vanilla. Stir in flour and beat well. Add coconut and nutmeats, then spread in greased 9 x 13 inch pan. Bake 350 for 30-40 min
  • Take out of oven and spread small marshmallows and set back in oven just until marshmallows melt; remove and cool.
  • Frosting: Mix all ingredients together and spread on top of cooled marshmallows. Let set several hours before cutting.
