Perfect Oatmeal Butterscotch Cookies

Ingredients

  • 1 cup butter softened
  • 1 cup white sugar
  • 1 cup brown sugar firmly packed
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3 1/2 cups old fashioned oats
  • 11 oz butterscotch chips

Instructions

  • Preheat oven to 350 degrees
  • In a large bowl or stand mixer, mix together butter, brown sugar and white sugar. Add eggs and vanilla and mix until well combined and smooth
  • In a separate bowl mix together flour, baking soda, salt and cinnamon. Add dry mixture slowly to butter sugar mixture and mix blend well.
  • Mix in oatmeal until well combined.
  • Stir in butterscotch chips until mixed well
  • Form dough into 1 inch balls and place on a lightly greased cookie sheet.
  • Bake for apprx 10-12 minutes until lighlty browning on the edges. Remove from oven and allow to cool on cookie sheet for apprx 2-3 minutes
  • Move to a cooling rack and allw to cool all the way.
