Pumpkin Cake with Maple Glaze

Ingredients

  • 1/2 c. unsalted butter softened
  • 1 c. brown sugar
  • 1 c. pumpkin puree
  • 2 eggs
  • 1 1/2 t. ground cinnamon
  • 1/2 t. ground ginger
  • 1/4 t. nutmeg
  • 1/4 t. cloves
  • 1 t. baking powder
  • 1 t. baking soda
  • 1 t. salt
  • 1 1/2 c. all purpose flour
  • For the glaze:
  • 1/2 c. butter
  • 1 - 1 1/2 c. powdered sugar
  • 1-2 T. maple syrup
  • 1/4 c. milk optional if glaze is too thick

Instructions

  • Preheat oven to 350 degrees F. Liberally grease a bundt pan or 9" loaf pan with cooking spray. Set aside.
  • Meanwhile, in a bowl combine all of the above ingredients and with an electrick mixer, beat at medium speed, scraping down the sides as necessary.
  • Pour mixture into prepared pan. Bake for approximately 35-40 minutes or until a toothpick comes out clean. Cool for about 15 minutes, then gently transfer to platter.
  • While bread cools, make the glaze. In a small saucepan, heat butter over medium-low heat until melted. Continue cooking, watching butter carefully until it sizzles - about 3-4 minutes. Remove butter from heat and cool completely. Then using a whisk, stir in the powdered sugar and maple syrup until a soft glaze has formed.
  • Pour glaze generously over top of the pumpkin loaf and let it set, about 30 minutes. Cut into slices and enjoy!
