In a large bow, add the butter, brown sugar, and white sugar. Beat until smooth and creamy about 2-3 minutes. Add the eggs and vanilla extract and beat until combined.
On top of the wet ingredients, add the baking soda, salt, and old fashioned oats. Beat to combine. Then add the flour until just combined. Carefully fold in 1 c. of chocolate chips.
Cover and chill for about 1 hour. Preheat oven to 350 degrees. Roll cookie dough into balls. Bake for about 11 minutes
Let the cookies stand on the cookie sheet for several minutes before transferring to a wire rack. Take the reserved chocolate chips and press into the tops of cookies. Then sprinkle a tiny dash of sea salt on top
