Preheat oven to 350 degrees. Line a cookie sheet with a silicone mat or parchment paper
In a large bowl combine softened butter, sugar and vanilla. Whip with an electric mixer for 1 minute or until nice and fluffy
Slowly mix in flour and stir until just combined and the dough is smooth
Using a medium cookie scoop or 1.5 Tbs scoop out the dough and roll it into a ball. If using stamps, lightly flour your stamp and firmly press down on the dough ball until about 1/4" thick. Slowly pull stamp off of cookie dough
Bake for 10-12 minutes or until the bottoms are slightly golden (you don't want tops or edges to brown)
Remove from oven and transfer to cooling rack
Once cooled, Enjoy!
