Steak Salad with Healthy Balsamic Vinegar Dressing

Ingredients

  • For the salad:
  • 2 cups of lettuce Romaine or spring mix
  • 1 hard boiled egg chopped
  • 1 Roma tomato chopped
  • 2 T blue cheese
  • 2 T red onion chopped
  • 8 oz grilled steak sliced (New York strip, Ribeye, or sirloin)
  • For the balsamic dressing:
  • 1/2 C olive oil
  • 1/4 C balsamic vinegar
  • 1 t garlic minced
  • 2 squirts liquid Splenda can substitute 1 T honey if you don't need to be careful with carbs
  • 1 t Dijon mustard
  • 1/2 t salt
  • 1/2 t pepper

Instructions

  • Place all the salad ingredients on a plate.
  • In a mason jar with lid, shake together all dressing ingredients.
