Texas Cowboy Cookies

Ingredients

flour

baking powder

baking soda
1

ground cinnamon

salt

unsalted butter
room temperature
1 1/2
cups
granulated sugar
1 1/2
cups
packed brown sugar
3
eggs
1
Tbs
vanilla extract
3
cups
chocolate chips
milk or semi sweet, personal preference
3
cups
old fashioned rolled oats
2
cups
sweetened flake coconut
1
cup
chopped pecans
optional
Instructions
Heat oven to 350 degrees
Mix flour, baking soda, baking powder, cinnamon and salt in a bowl and set aside
In a large bowl or electric mixer beat butter until smooth and creamy. Slowly beat in sugars to combine.
Add eggs one at a time while beating. Add in vanilla and mix well.
Mix in flour mixture until just combined.
Mix in chocolate chips, oats, coconuts and pecans
Drop cookies in heaping tablespoons onto nonstick baking sheet or baking sheet lined with parchment paper.
bake 8-10 minutes until edges slightly browned and still doughy in center.
Remove and allow to cool on baking sheet apprx 3 minutes then transfer to a cooling rack.
